Born and bred in the Derby City, Jackie Pallesen returns to her native Kentucky after spending five years in Copenhagan, Denmark, and even though her work there as a teacher at Rygaards International School included curriculum development and myriad other organizational responsibilities, she still found the time to found and operate an American style catering bakery named Bluegrass Bakery. Not only does this seem to prove the old adage that you can take the girl out of Kentucky, but you can’t take Kentucky out of the girl, her skill at creating artisan cupcakes and cookies pretty much guaranteed a warm reception among the LVAA staff upon her return to the U.S. This is not Jackie’s first experience with LVAA, having worked in the Open Doors program while attending the University of Louisville, and she is happy to have come full circle with her husband, Joen and young son, Osccar accompanying her on the journey.
